Takagu Fried Chicken was built on a single crispy chicken recipe that its founder tested hundreds of times during university, improving it with every attempt. The name comes from “takagu”, the Old Turkish word for chicken, and today the shop serves from its single location in Üsküdar, İstanbul.
Where does the name Takagu come from?
“Takagu” is an Old Turkish word for chicken. Rather than reaching for a foreign name, the brand took the name of what it makes from the oldest form of its own language: a recipe learned from all over the world, served under a Turkish name.
How was the recipe developed?
The Takagu recipe was not written in a single day. Over his university years the founder worked through hundreds of recipes: changing one thing each time, tasting the result, and starting the next attempt with what he had learned.
No single cuisine was taken as the source. Fried chicken traditions from many countries were studied through YouTube and every other source within reach, and what each one did best was noted separately. The recipe served today is those notes brought together on one plate.
